Boza is a traditional drink in Bulgaria and the Balcans. It has a dense texture with sweet and sour taste. Its main ingredients are rye and wheat which makes it a naturally healthy product.

History

Production of boza is believed to date back to ancient Mesopotamia, in the lands between Tiger and Euphrates, more than 8,000 years ago. Due to its high nutritional qualities and beneficial effects on the body, it gained immense popularity in the Ottoman Empire, where it was included in the mandatory diet of the army – to strengthen ones body and spirit. According to the famous travelogues of Evliya Çelebi, a famous Turkish poet, historian and traveler, in the seventeenth century there were 300 boza workshops in Istanbul.Hea

Healthy

Boza is a great drink for breastfeeding mothers because it enhances milk excretion. Breastfeeding mothers can take 1/2 to 1 liter of boza daily. Bacteria die quickly under conditions of lactic acid and acetic-alcoholic fermentation. Therefore, boza has an antimicrobial action similar to yogurt.

Boza contains a lot of minerals – sodium, potassium, calcium, magnesium, iron, silicon and some trace elements such as manganese, zinc, vanadium, molybdenum and more. Most vitamins are represented by the group B – B1, B2, B6, B12, PP, pantothenic and folic acid, etc.
